After a bit of an off-the-wagon moment as far as the diet was concerned in the second half of 2020 I am back on a fairly controlled eating regime. I'm not particularly worried about what the scale says, it is more about feeling better - and it is working.
I am on the slow-carb diet. This basically means meat, salad/vegetables from above ground (i.e. the non-carb ones) and beans (the slow-carb part). You get a day off to eat whatever (Friday!) so there is a bit of release value once per week. If you would like me to write a bit more on the slow-carb diet leave a comment and I will write up my own view on what I like and what I miss while doing it (spoiler: no dairy).
A really big go-to breakfast, lunch, snack, or even dinner for us is a hard-boiled egg or three. During the week, it is less about perfecting our culinary skills and more about efficiency. I don't mind making the eggs, it is a relatively easy task. Often Anki offers, however, which is a much more exciting event. This is because there are two methods we have in the house to boil and egg.
Let's just call one the "Low-Stress Method" and the other the "Anki Alternative Method".
I want to stress, most often we go with the first method in our house. Anki likes to mix it up once every couple of weeks with the Alternative Method though.
This morning I had lovely Method 1 eggs cooked for me they were delicious. Thank you, honey. The day before however, Method 2 had been deployed, when I was really hungry. Really hungry. So hungry I did even eat the Method 2 eggs.
Low-Stress Method
Takes some eggs out of the fridge.
Fill a pot with water, place eggs in the pot, turn on the stove, place the pot on the stove and let the water boil. (or place eggs in when boiling).
Set a timer for 15 mins. On your Apple Watch. On Alexa. Either of which takes approximately 5 seconds to do and is next to fail-proof.
Go about your day for the next 15 minutes, join work phone calls, read a book, stare out the window, day-dream, plot world domination, or whatever.
When the alarm sounds, remove the pot from the stove, remove the eggs from the pot.
If very hungry, run eggs under cold water, smash on the bench, and peel.
If less hungry, leave eggs to cooldown then smash on the bench and peel.
Enjoy a hard-boiled egg with a very tasty texture.
Anki Alternative Method
Takes some eggs out of the fridge.
Fill a pot with water, place eggs in the pot, turn on the stove, place the pot on the stove and let the water boil.
Go about your day for the next 15 minutes, join work phone calls, read a book, stare out the window, day-dream, plot world domination, or whatever.
Continue to go about your day for the next hour, on one or more of the tasks from #4, ones that don't involve you going near the kitchen.
Someone else in the house needs to discover the eggs with less than 1cm of water remaining ideally. Any less water is probably a bad idea and may require a new pot or even a new stove (scientifically tested and validated).
Return to the kitchen and utter some statement along the lines of "they will be fine and don't waste food".
Leave to cool, as no amount of cold water will allow a quick peel. Put them in the fridge if you happened to discover them first.
Attempt to peel, likely to not be an easy task.
"Enjoy" the special hard-boiled egg, with a special extra chalky yolk with a nice green tinge. It is best served to someone else who should shut up and deal with it even though it is one of the few items of food they plan on eating that day.
As you can see the methods deviate slightly at Step 3. Give them both a try and let me know which one you prefer. I do love my wife and I do appreciate all she does but there is a life expectancy on the cookware. I would make a comment about similarities between wives and mothers here too - but that might be pushing it too far. My kids love Nanny's extra-hard boiled eggs.

Not a problem Stu we went shopping and I left the eggs boiling on low heat for a couple of hours. Pot boiled dry eggs were black. Thank goodness for circulon pots!! But of course we are geriatrics so we can be excused.
